Yeah... I met an American named Jane and walked with her this morning. She gave me her version of tiropita, or Greek cheese pie, one of Teddie's favorites.
1 big block of Philadelphia cream cheese
1/2 cup grated parmesan
3/4 cup of feta cheese, crumbled
4 lightly beaten eggs
dash of nutmeg (optional)
Rub sides and bottom of an 8x8 pan with olive oil. Use thin filo dough as opposed to the thick kind. Cut/piece together layer of filo of bottom of pan. Brush with olive oil. Repeat this for two more layers of filo dough. Carefully spoon blobs of cheexe mixture on dough and spread with knife evenly to the edges of the pan. Repeat the layering of sheets of filo and olive oil on top of cheese mixture. Brush top layer with olive oil with a few drops of milk mixed in or top with olive oil and sprinkle with water. (This will aid in the light puffy top.) Precut squares through the top 2 lays of filo dough. Bake at 350 till golden brown. Let cool. Janes daughter says you can also add sauteed green onions to cheese mixture for more flavor. She also said that a great Greek snack is cubed watermelon along with cubed feta, as a snack.
