1 and 1/2 cup unbleached white flour
3/4 cup flaxseed meal
3/4 cup oat bran
1 cup brown sugar
2 tsp. baking soda
1 tsp baking powder
1/2 tsp salt
2 tsp. cinnamon
1 and 1/2 cups grated carrots
2 apples, peeled and grated
1/2 cup raisins, optional
1 cup chopped nuts
3/4 cup milk
2 eggs beaten
1 tsp. vanilla
mix together all dry ingredients and fruits/vegetables in one bowl. Mix all wet ingredients in another. Stir everything till it is just mixed. Fill muffin cups 3/4 full. Bake 350 for 15-20 min.
